Glutathione (GSH), also known as Reduced glutathione or L-Glutathione reduced, is an important antioxidant found in plants, animals, fungi, and some bacteria and archaea. It appears as a white crystalline powder. Glutathione is a tripeptide, characterized by a gamma peptide linkage between the carboxyl group of the glutamate side chain and the amine group of cysteine. The carboxyl group of cysteine is linked to glycine through a standard peptide bond. Thiol groups act as reducing agents, typically present at concentrations around 5 mM in animal cells. Glutathione reduces disulfide bonds in cytoplasmic proteins to cysteines by donating electrons. During this process, glutathione is converted into its oxidized form, glutathione disulfide (GSSG), also referred to as L-glutathione.
